A beloved North End butcher shop known for its trademark garlic sausage is expanding.

Tenderloin Meat and Sausage is building a new and bigger store across the street from its current location at 1483 Main St.

Owner Walter Kolpick says he’s always wanted to grow his business, and is excited a new store is in the works.

Kolpick opened his first store on McPhillips Street in 1972, before he was a sausage specialist.

"My mom said to me, ‘Why don't you make garlic sausage?’, and I said, ‘Because I don't know how to,’" he said Thursday from the back of the shop.

Guided by his grandpa's recipes from Poland, he’s been smoking garlic sausages for 40 years. He said it's the secret recipe that makes the sausages stand out -- turning the small Main Street meat shop into a Winnipeg institution.

“I would say it's the best garlic sausage in the city,” said customer Bert Richter. “It's delicious. It's got good flavour. It's not fatty," he said.

The butcher shop now makes more than 1,000 sausages every day.

Deli Manager Johanna Engel says people come from all over to buy garlic sausages.

Kolpick said he’s received offers to open his shop in other parts of Winnipeg, but he wanted to stay in the area and loves the diversity and people of the neighbourhood.

"North End pride and that's what we are all about here. The North End gets a lot of, ‘Oh it's bad,’” said Kolpick. “I love it here. It's not bad.”

Kolpick said he owes his success to his employees, and his customers, and can't wait to share the new shop and trademark sausages with even more people.

The new store is scheduled to open in fall 2016.
