Cooking with the chili champ

Wayne Shymko's Badazz Chili
1 1/2 lb ground beef
1/2 lb andouille sausage or your favorite
1 lb pulled pork, or pulled chicken or beef
8 oz. apple juice or beef broth
6 oz. your favorite BBQ sauce
6 oz. chili sauce
1 cup diced onions
1 cup bell peppers
3 tbsp brown sugar
3 tbsp BBQ rub
6 oz. Ketchup
3 tsp beef boullion
2 tsp minced garlic
1 tbsp onion powder
1 tsp garlic powder
1 tsp chicken bullion
1 tsp oregano
1 tsp cumin
1 tbsp chili powder
1 tsp hot chili powder
1/4 tsp cayenne
1 tsp paprika
Montreal steak spice
1 tsp baking soda
1/4 tsp white pepper
1 can bush beans
Mix baking soda with 3 tbsp water and add to ground beef and let sit for 15 minutes. The baking soda will retain moisture in the beef while cooking and helps in browning.
Brown ground beef and season with montreal steak and worchestershire and drain. Lightly saute the sausage, onions and bell peppers and add to beef in large pot. This recipe will make about 3 qt.
1st ingredients, add together:
Apple juice for a sweeter chili or beef broth for savory
BBQ sauce (A Kansas style sauce has a smokey flavor, while a Memphis style tends to be sweeter)
Chili sauce (regular or spicy, whatever you prefer)
Prunes. Remove after 1 hr
Hot chili powder
Cayenne a little goes a long way
If your are a real chili head and looking for serious heat. Pierce 2-3 jalapeño pepper and add to mixture.
Remove when desired heat level is achieved, it won't take long. If you really want to add heat squeeze out the juice before removing.
Mix and stir frequently on low heat for 1 hour.
2nd ingredients, add together:
1/2 tsp paprika
1/4 tsp cayenne or to taste depending on heat
2 oz chili sauce
2 oz BBQ sauce
1 tsp chili powder
1 tsp chicken boullion
1 can bush original recipe beans. If you don't like beans don't add, or add more if desired. Bush has some great flavors like a smokehouse variety which will add a nice smokey flavor.
Another good addition as a filler, is the Hormel No Beans Chili.
If required add additional apple juice or broth to change consistency.
Simmer for additional 1/2 hour.
Pork will absorb a lot of moisture so you may want to add additional apple or broth at end of cook.
