Now You're Cooking: Cherries with Chevre and Cherry Brandy

1 cup pitted cherries
1/8 cup cherry brandy
1/4 cup chevre, crumbled
Fresh mint (optional)
Pour brandy over cherries. Let sit at least one hour at room temperature. Toss in crumbled chevre.
This dish can be served as an appetizer with crackers or baguette, or as a dessert with a sugar cookie or as a topping for angle food cake.
