Fresh Salsa (Pico de Gallo)

1 onion, minced

1 jalepeno, minced

1 lb tomatoes, diced

1 tbsp brown sugar (optional, depending on sweetness of the tomatoes)

1 tbsp red wine vinegar

Juice of one lime

2 tbsps olive oil

½ tsp cumin

Chopped cilantro

Salt and pepper to taste

 

Combine all ingredients and serve

 

Cooked Salsa

2 tbsps olive oil

1 onion, minced

1 jalepeno, minced

1 lb tomatoes, diced

1 tbsp brown sugar (optional, depending on sweetness of the tomatoes)

1 tbsp red wine vinegar

Juice of one lime

½ tsp cumin

Chopped cilantro

1 tbsp tomato paste (depending on the tomatoes)

 

  1. sautee onions and peppers.
  2. add remaining ingredients, simmer for 45 mins to an hour until jammy.

 

Honey Dew, Mint and Basil Salsa

1 honey dew melon, peeled, seeded and finely diced

1 jalepeno, minced

1 tsp minced ginger

¼ cup chopped mint

¼ cup chopped basil

¼ cup chopped cilantro

¼ cup chopped green onion or chive

Juice of one lime

Juice of one lemon

1 tbsp honey (depending on how sweet the melon is)

2 tbsps olive oil

Salt and pepper to taste

 

Combine all ingredients
