Bacon jam

Bacon, sliced - 2 cups

Onions, sliced - 2 cups

Maple syrup - 1/4 cup

Balsamic vinegar - 1/8 cup

Chipotle pepper in adobo, puree - 1 tsp.

Baguette, sliced, toasted - 6 pieces

Brie- 6 x½ oz

Lingonberry sauce- 6 tsp.

Sauté the bacon until ½ way done about four minutes. Add the onions and reduce heat to low. Cook, stirring every 4-5 minutes until the onions are caramelized. This will take at least 30 minutes.

Add the maple, balsamic vinegar and chipotle pepper. Mix well and reduce for a few more minutes. Cool and reserve for service.

Spread some bacon jam on the baguette, top with brie and bake until the cheese is melted. Plate and garnish with lingonberry sauce.
