White sugar – ¼ cup
Lemon juice – 1 tsp
Heavy cream, tempered – 1/3 cup
Butter, cold cubes – 2 Tbsp
Mix the sugar and lemon juice in a small pan over medium heat.
In another pan heat the cream until it almost boils, then turn off heat.
Keep stirring the Sugar and lemon mixture until light brown.
Remove from heat and mix in the Cream until it is smooth.
Cool and serve.
