Rice vinegar- 1 cup

Sugar - 1 cup

Water - 1 cup

Chili flakes - 1 tsp.

Cinnamon stick - 1 each

Star anise - 6 each

Pineapple, cored , sliced - 1 each

Pack the pineapple into glass jars. Bring the remaining ingredients to a boil and pour over top of the pine apple. Refrigerate until use. This is great with pork belly, on a pizza or with roasted chicken.
