Oyster mushrooms – 100 g

Roasted garlic cloves – 8 each

Onion, small dice –1/4 cup

White wine –1/2 cup

Cream –1/4 cup

Parmesan cheese, grated – 1/2 cup

Green onion, chopped –1 tbsp.

Sauté the onions until translucent.

Add the oyster mushrooms. Sauté for about 5 minutes.

Add wine and reduce by ½. Add cream and thicken with ¾ of the cheese.

Plate over chicken or toss with gnocchi. Garnish with green onion and a little chopped rosemary.
