Poached prawns - 12

Mango, sliced - 1

Coconut, fresh, shredded - 1/4 cup

Baby lettuce - 3 cups

Canola oil - 2 tbsp.

Sesame oil - 1 tsp.

White balsamic vinegar - 2 tsp.

Mix the Mango, coconut and lettuce in a bowl. Season with a little salt & pepper.

Add the oil and vinegar. Plate and top with poached prawns.

Other Instructions; Poaching Liquid, 1L water, 4 star anise, 2 bay leaves, the juice of one lemon and salt. Bring to a boil and simmer for 20 minutes before adding your prawns. Poach the prawns for 3-4 minutes depending on the size of the prawn. I ALWAYS throw a couple in for myself to try for doneness.
