Gai Lon or Mustard Spinach - 10 heads

Canola oil - 15ml

Sesame Oil - 5ml

Sesame Seeds - 5ml

The preparation for this is very fast so have your frying pan hot when you shock the Gai Lon.

Shock the Gai Lon in 5L salted water for 45 seconds.

Drain and then sauté in a little canola oil for 1 minute.

Turn off the heat and add the sesame oil. Plate, and garnish with the sesame seeds.
