Braised pork belly or bacon - 1 oz.

Mirin - 1/3 cup

Soy - 1 tbsp.

Sesame oil - 1/4 tsp.

Scallops - 2

Fresh Spinach - 4 cups loosely packed

Place the pork belly in a hot pan. When the pork belly pieces start to brown, add the scallops. Cook the scallops on one side until almost done. Be careful to control the heat so not to burn the scallop. The scallop should be golden brown. Take the scallop out of the pan and hold it in a warm spot while you are preparing the spinach.

In the same pan that the scallops were just removed from, add the spinach. Sautee the fresh spinach for a couple seconds and then add the remaining ingredients. Continue to cook until the spinach has wilted a little.

Plate the spinach and then top with the scallops.
