Soba noodles - 1 bundle

Sweet soy sauce - 1/4 cup

Rice vinegar - 1 tbsp.

Fish sauce - 1 tsp.

Sesame oil - 1 tsp.

Scallops, large - 4 each

Canola oil - as needed

Cilantro - 2 sprigs

Sesame seeds - 1/2 tsp.

Mix the sweet soy sauce, rice vinegar, fish sauce and sesame oil together and set aside. You will be cooking the scallops and soba noodles at the same time so you will need a boiling pot of water, enough to cover the soba noodles and a hot seasoned or non-stick frying pan.

Place the noodles in the boiling water. Stir so they do not stick. And then place the scallops in the hot frying pan. You want to cook the scallops over half way through before you turn them. When they are turned, they start releasing liquid that could burn. It is hard to give you a specific time because I don’t know how big you scallops are. About 2-5 minutes. Trial and error.

When the noodles are done, drain and then toss in the sauce. Place on bowl and top with scallops, cilantro and sesame seeds.
