Risotto is one of those recipes where the ingredients may not be exact. The rice will keep absorbing the stock when you put it in. The rice should be cooked through but still have some resistance when you bite it. If you don’t require all of the sock don’t use it. Toast the rice in a pan for 2-3 minutes on medium heat. Reduce heat to low and add 6 oz of stock. Stir it in gently. Do not stir too much or too hard, it is a slow process. When the stock is absorbed repeat the process. When it is half way cooked, add the cooked turkey. Stir it in. When the rice is palatable stir in the parmesan cheese. Some people add a little cream or butter at this point. Plate the risotto and garnish with a little turkey gravy and cranberry sauce. |
