Jerk Chicken Coconut Cream Pasta


Yield: 2 servings


1 whole chicken breasts, cut into small strips or cubes

1 tablespoon jerk seasoning

1 packet penne pasta, boiled and drained

1 tbsp olive oil

2 cloves garlic, minced

1 smallonion, (chopped)

4 ounces heavy cream

1/2 cup coconut milk

1tbsp teaspoon salt

1/4 medium red sweet pepper,     (sliced)

1/4 medium green sweet pepper, (sliced)

1/4 medium yellow sweet pepper, (sliced)

1/2 cup broccoli florets (pre-cooked)

 Parmesan cheese



1. Cook penne pasta according to instructions on package; drain and set aside.

2. addsalt,garlic and jerk seasoning to chicken breast and leave to marinate.

3. Heat olive oil and sautee chicken breastuntil perfectly cook add onionand sweet peppers to cook. then add heavy cream and coconut milk.

4. Fold in the pasta, broccoli florets and stir well to combine.  Sprinkle on the Parmesan cheese and serve immediately.
