Now You're Cooking: Sea mussels in white wine sauce

Mussels, fresh, live - 1/2 lb
Butter - 15 ml
Onions - 60 ml
White wine - 125 ml
Sauté the onions in the butter over medium heat. No color please. Add the mussels and sauté for two minutes.
Add wine, cover and steam until the mussels open. Discard any that don’t. Remove the mussels from the pan. Reduce the liquid and pour over top
