Sugar - 1/4 cup

Salt- 1/4 cup

Water - 2 L

Dry rosemary 1 tsp.

Thyme - 1/2 tsp.

Black peppercorns - 1 tsp.

Bay leaf - 2 each

Boneless chicken breast - 10

Mix all ingredients and bring to a boil. Cool to 3 C.

Place chicken in the brine.

Do not pack them in. Brine for three hours. Remove from brine.

Rinse, pat dry and place uncovered on a rack in the cooler for two hours. Cook how you would a seasoned chicken breast.
