Ingredients
4 pork loin chops
1/2 - 1 tsp mild chili powder
1 tsp smoked paprika
sea salt and black pepper to taste
2 tbsp olive oil
few thyme springs
4 garlic cloves (lightly smashed)
5-6 start anise, lightly smashed (optional)
1 tsp coriander seeds, lightly crushed or pimento berries
Directions
1.Cut off the rind (skin) and excess fat around the pork chops.
2. Mix the chili powder, paprika, and some salt and pepper with the olive oil in a wide baking dish. Ad the thyme leaves, garlic, star anise and coriander seeds or pimento berries. Add the pork chops and turn to coat. Cover and let marinate for at least 30 minutes, or in the refrigerator overnight.
3. heat frying pan with with olive oil, cook pork chops on both sides for 4 minutes or until golden brown, baste pork chops while cooking to keep moist.
4.heat the oven to 350 degreesF. Bake the pork chops, uncovered for about 8 to 10 minutes until the meat is just firm when lightly pressed. serve with starch and veggies of choice.
