Bothwell Cheese is celebrating 80 years of existence, and giving a gift to Winnipeggers.

The Manitoba company opened a pop-up restaurant Wednesday in the lobby of the Fairmont Winnipeg hotel. They served special macaroni and cheese to 100 lucky people.

Of course the star of the dish was its Bothwell Cheese. It was prepared by local chef Ben Kramer, who torched a cheese slice directly onto the macaroni and cheese in front of diners.

Don’t worry If you missed out on your cup of mac and cheese on Wednesday. Bothwell plans on holding another pop up restaurant Friday at another secret location.
