3 eggs

2 cups flour

¼ cup water

1 tsp salt


Beat eggs well, add water and salt. Make a well in the middle of the flour. Pour the egg mixture in the centre. Work the flour into the egg mixture until it forms a dough. Knead 60-70 times. Let rest.

Roll out in pasta maker starting at one and increasing to 8. If the dough gets too sticky, dust with flour. When thin enough, fold and cut into lengths or use a pasta roller to make noodles. Boil in salted water for 4-5 minutes. Toss in a little browned butter.
