Green cabbage, chopped - 2 cups

Leek, white parts, chopped - 1 cup

Bacon, sliced - 1 cup

Mashed potatoes - 1 cup

Sautee the bacon until golden brown and then add the leeks and continue to sautee until translucent. Remove the bacon leek mixture leaving the bacon fat in the pan. Cook the cabbage in the bacon fat until cooked. This will take about 20 minutes. To help the process along, I add 1 cup of water and cover the cabbage, reducing the heat to low, stirring often.

When the cabbage is cooked, add the bacon/leek mixture and mashed potatoes. Mix well and serve. This will hold in the oven while you are preparing the rest of the meal. Some versions have butter or cheddar cheese melted over the top.

I would put this over the top at this point. You will also notice that I have not included a recipe for mashed potatoes. You can use reheated leftover mashed for this or make it from scratch like you would with butter, cream, salt and pepper
