Quail, boneless - 2

Oil - as needed

Bacon, chopped - 2 oz.

Onions, small dice - 1 oz.

Swiss Chard, rough cut - 2 cups

Orange, large dice - 1

Oil and season the Quail. Place on a medium hot spot on the grill, skin side down. The quail will take about approx. 5 minutes. Let the bird rest in a warm spot while you cook the chard.

Heat a little oil in a frying pan and fry the bacon, when it starts to brown add the onion. Sautee until the onions are translucent and then add the chard. Continue to sautee for two minutes, turn off the heat, add the orange, mix well and separate on to two plates. Top with quail and serve.
