Boiled potato, shredded - 1 cup

Onions, diced - 1 tbsp.

Red peppers, diced - 1 tbsp.

Corned beef, chopped - 1/4 cup

Tabasco sauce - to taste

Green onions - 1 tsp.

Poached eggs - 2 each

Sautee the onions and peppers on high heat in a little oil or bacon fat if you have. Add the potatoes and reduce heat to medium. Cook until golden brown and then add the corned beef. Adjust seasoning with tabasco. Top with poached eggs and green onions.

Other Instructions - poached eggs. You will need 2 L of salted water. Some cooks like to add a little vinegar to the water. It helps hold the eggs together. Bring the water to a gentle boil. I like to give the water a gentle swirl before I drop the eggs in. Put the eggs in the water and poach for 3 or 4 minutes. Remove with a slotted spoon. (The more eggs you want to poach, the more water you will need.)
