Arctic char steaks - 6 small

Olive oil - as needed

Salt - to taste

Pepper - to taste

Wild rice - 1 cup

Chicken stock - 2 cups

Onions - 1/4 cup

Mushrooms - 1/2 cup

Soak the wild rice overnight in water. Strain and cook slowly in the chicken stock. In another pan, sautee the mushrooms and onions together. When the wild rice is cooked, strain out any excess liquid and add the wild rice to the sautéed onions and mushrooms. Cover and keep warm. Pat the arctic char steaks dry and season with salt and pepper. Grill or pan fry until they are done. This should take 4-7 minutes depending on how thick your steaks are.

Place the wild rice mixture on the plate and top with char steaks.
