Corn on the cob - 3
Mayonnaise - 1/2 cup
Lime juice - 1 lime
Lime zest - 1 lime
Salt - 1 tsp.
Chilies - 1 tsp.
Parmesan cheese - 2 tbsp.
Poach the corn on the cob for three minutes. While the corn is poaching, mix the remaining ingredients. When the corn has finished poaching, place them in the BBQ for two minutes to evaporate any remaining water. Place the corn in the mayonnaise mixture and coat well.
Grill the corn over medium heat. Be careful for flare ups. Mayonnaise is mostly made up of oil. Grill for three or four more minutes. Cool slightly before eating.
