Wild asparagus - 1/2 bunch

Butter - 1 tbsp.

Salt & pepper - to taste

Egg - 2

Gravlax or smoked salmon - 6 slices

Toasted bread or English muffin - 2 each

Fresh dill - 2 sprigs

Fresh lemon - 1 wedge

To make this recipe you will need a small pot of boiling water, a small frying pan and a toaster.

Set the water to boil and have the frying pan on medium heat. Inspect the asparagus removing any wilted, dirt or rusted pieces.

Melt the butter in the frying pan. Add the asparagus. While the asparagus is cooking in the butter, drop the egg into the boiling water and the toast in the toaster (Pretty important not to mix the two up.). The asparagus is pretty straight forward to cook. They are small so the cooking time will be two to three minutes. Remove from heat when done.

To assemble lay the gravlax over the bread top with the poached egg then the asparagus. Finish the dish with a squeeze of lemon.
