Pulled pork poutine

4 cooked potatoes

500 g smoked cheddar

2lbs BBQ Pulled Pork

¼ litre gravy

Blue cheese

Season pork with salt and pepper. Brown in a hot pan with a little canola oil. Place in a slow cooker with ½ the BBQ sauce and a touch of water. Cook on low for 5 hours. Remove from slow cooker and shred with a fork. Mix in remainder of BBQ sauce. Keep warm for service.

Fry potatoes in hot oil. Place in bowl and top with smoked cheddar, gravy, pork and blue cheese.

Potato Cups

1 cup mashed potatoes

1 cup flour

1 egg beaten

.25 cup parmesan cheese.

Mix parm, egg& mashed well. Add flour. Make into a dough. Roll out thin and bake at 300 F inverted on a muffin tin, until golden brown.
